Kaluga sturgeon (Huso dauricus) is a fascinating freshwater fish from the same family as the beluga sturgeon.

Its caviar impresses with large, glossy grains up to 4 mm in diameter. The color usually ranges from dark gray to greenish, but can vary slightly depending on the fish's age. Since Kaluga sturgeon only spawns for the first time at 16–17 years of age and then takes a break of around five years, its caviar is one of the rarest and most precious delicacies in the world.

Adult Kaluga sturgeon reach impressive dimensions of up to 3 meters in length and around 100 kg in weight. Historical accounts even tell of specimens over five meters long that weighed almost a ton and lived for more than 50 years.

The taste of Kaluga caviar is delicate, mild, and reminiscent of the famous beluga – creamy, delicate, and with a texture that melts in the mouth. A treat for special moments and an exceptional gift for true gourmets.
